CBD Brownies

Perhaps the all-time most popular infusion recipe, these brownies provide a slightly more decadent way to take your daily dose.

Tip: As with all recipes they can be adapted to personal preferences (half a teaspoon of sea salt flakes for example is a fantastic addition as it will make your brownies taste more chocolatey).

Ingredients:

  • CBD to your preference
  • 185g unsalted full fat butter (room temperature)
  • 185g high cocoa content (70%+) dark chocolate
  • 50mg white chocolate
  • 50mg milk chocolate
  • 40g cocoa powder
  • 85g plain flour
  • 3 large free range eggs
  • 275g caster sugar (ideally golden)

Method:

  1. Chop the butter into small cubes and place in a bowl alongside the smashed up dark chocolate.
  2. Place the bowl over a pan of simmering water. The steam will melt the chocolate and butter mix.
  3. Cover and leave to cool at room temperature. Pre-heat oven to 180C (Gas Mark 4).
  4. Line a 20cm square tin with baking parchment.
  5. Carefully sieve through the combination of flour and cocoa powder into a bowl. No lumps, please!
  6. Combine the eggs with caster sugar and thoroughly mix into a milkshake-style consistency. This may take a few minutes. Add to the parchment lined tin.
  7. Pour over the chocolate mix very gently to try and keep the base ‘airy’ yet well combined with the chocolate.
  8. Lightly scatter the remaining ingredients – chocolate and CBD – (and any additional favourites) to the mix. It may look a little dry but fret not. Fold over repeatedly.
  9. Bake for 25 minutes. Inspect the brownie mixture and see if it’s wobbly – if so, return to the oven and check again in a few minutes.
  10. When cooked through, remove and allow to cool. Carve into segments and serve!

Serving Suggestions:

Delicious either ‘as is’ or combined with a nice dollop of ice cream! These will also keep for 3 days or so in an airtight container.

CBD Guacamole

CBD Guacamole

Another very popular option is to make a delicious guacamole dip that pairs perfectly with your CBD.

This smooth paste uses plenty of avocados so make sure you buy these in advance or use ones that have already ripened.

Using more avocado than usual helps to keep this chunky guacamole nice and thick (CBD can often over dilute when used in this kind of recipe).

Ingredients:

  • CBD to your preference
  • 4 pitted & peeled ripe avocados
  • 1 fully crushed and juiced lime
  • 3 tablespoons of finely diced coriander
  • 1 small diced white onion
  • 2 diced tomatoes
  • 1 large spoon of premium olive oil
  • Salt & black pepper to taste

Method:

  1. There’s no need to use a food processor here. Simply mash up the avocado with a fork as thoroughly as possible.
  2. Add the CBD and other ingredients. Mix thoroughly with a fork.
  3. Taste and add a little more lime juice if necessary.

Serving Suggestions:

It’s guacamole! Use in tacos, sandwiches or salads – you name it!

Ideally, keep this stored in the fridge in a suitable container. It ought to last two days at premium quality and three at a stretch.

Combine with diced chilli peppers or garlic for something a little more challenging to the palate.
